Last week while having lunch with a fabulous friend at Lettuce in Walnut Creek, I had gazpacho. Gazpacho is a refreshing Spanish cold tomato soup and the burst of flavors in my mouth transported me back to my days at Southwest College of Naturopathic Medicine. Four of us in my medical school class had a ‘lunch club’ – we would each take turns bringing in lunch for everyone once a week. This cut down our daily hassle of fixing a daily lunch and we had to worry about we were having for lunch less often. One dear friend had a wonderful recipe for Gazpacho that I fell in love with. I don’t have her recipe for it, but I found one online to share with you.
